Some Cornish game hens grilled raise-direct for color, then finished inside a skillet (set on the grate, lid closed as usually) and periodically basted with butter/garlic/rosemary as it finished coming up to temp. This is now my goto technique for cooking whole birds on the BGE.

Did pork belly burnt ends for an appetizer last night. Used Captain Rodney’s Boucan Glaze to finish. Fantastic.

I took 8 oz of frozen 80/20 out of the freezer and into the frig two nights ago, it was still half-frozen at noon today so I defrosted half of it and made a single burger; that may have been the issue.StillH2OEgger said:

@Bar these were smoked indirect at 300 for about 90 minutes, then an hour in foil with honey and brown sugar until they were tender and probing around 200. Seared to direct for 2 minutes a side to finish.Give it a try!XL BGE, Large BGE, Small BGE, Weber Summit NGMemphis
