The only place where people routinely put large hunks of protein on their smoker after midnight, pass out in an alcohol-fueled daze, have their fire go out, wake up in the middle of the night to restart it, only to have it be one of their top three briskets ever.Ozzie_Isaac said:Btw, this is one of the only places where you can have a cook going sideways at 2am in the morning and you will get help."I've made a note never to piss you two off." - Stike

@DainW and @PigBeanUs - I agree with Ozzie. Take a look at my first cooking post here to see why.Ozzie_Isaac said:Btw, this is one of the only places where you can have a cook going sideways at 2am in the morning and you will get help.
I was impressed by the thoughtful comments and suggestions for a newbie's first documented cook. The only thing I can complain about is that the times of the comments are missing after a post is archived, otherwise you could follow the timeline and see what Ozzie meant. I do know I was the only one awake in our house when I cut the meat after letting it rest.
That experience in 2017 is why I'm still a member of this forum. The people who care will comment and help. It is what this forum was back then and it still can be today.

Speaking of time, why do ppl use 12am or 12pm, why not 12noon or 12midnight?PigBeanUs said:“2am in the morning”

Actually, 12midnight could be confusing/ambiguous too, is it the end or start of day.
True story, our kid's graduating class booked an after prom midnight boat cruise. Huge disappointment for the kids when the boat was MIA, thanks to the 12 am/pm mix up

Okay I think I’ve figured out what’s going on here. One of my other interests is fly fishing. My local river has a forum, of which I consider myself one of the regulars, been a member for 5-6 yrs now. All of the discussion revolves around fly fishing in some form or another. Sometimes the forum is absolutely dead. Sometimes there’s a lot going. Anyway, this is the exact opposite of that, except for cooking. Anyway, never a dull moment around here from what I can tell so far, and also some pretty damn good cooks, when they do occasionally post something cooking related.

@DainW you like fishing for flies? Leave a crawfish under a drivers car seat but leave the window open - you should be able to catch a bunch of flies all at once. (Inside joke - don’t ask.)DainW said:One of my other interests is fly fishing.
People around here seem to really love stories just as much as cooks. Want proof? Look at the what are you doing/buying now threads. Tie them together and you might have a masterpiece. Or you can have fun and take it in another direction like the tree rats and fancy wine thread. You like fly fishing? Post some pics and stories, and finish with the cook.
No idea where you are, but you are not alone in the love of fly fishing. Whether a tiny native brook trout in a small mountain stream, a grayling in high altitude lake, or a yellowfin tuna - I will throw a fly at it if I can. Here is my first yellowfin on a fly back in the mid 90’s True offshore fly fishing was pretty much in its infancy then. Post a picture fly fishing and I know you will get a “like” from me

I just came to post a similar answer. The off topic stuff keeps knowledgeable eggers engaged on the forum and therefore when an on-topic question is presented, help is usually minutes away.Ozzie_Isaac said:Btw, this is one of the only places where you can have a cook going sideways at 2am in the morning and you will get help.
Also, there are a lot of people here knowledgeable about real stuff. There have been several times where the front page contained legit help or answers to 5 or more off topic queries. Forklift repair, HVAC repair, refrigeration equipment assistance, photography help, inside look at some epic vacations, etc.
If you try to Google an Italy vacation, you will find top results from companies that are great at marketing. If you ask for recommendations here about an Italy vacation, you will get a lot of responses from people who have been there.
There is a lot of value here. There are lots of opinions here. There are a lot of trolls here. You will figure out what threads you don't want to chase.

Nice. That’s a hell of a tuna man. Can’t imagine what one of those things would pull like. Figured there had to be at least a couple other people on here fly fishing. I’m in Oklahoma. I’ll chase just about anything that swims, bass, carp, whatever. I really like smallmouth in the summertime, but mostly I’m chasing trout either in broken bow, which is a tailwater fishery in SE OK, or somewhere in Missouri. Try to go to Colorado once a year as well. My best fish came from the white river below bull shoals dam in Arkansas.Sea2Ski said:@DainW you like fishing for flies? I’ll start a “tips and tricks” thread. I’m cooking wings, and we all know the story. Raised direct 375-400 until done, or the ten other variants. But, I’ve got an indicator that tells me the wings are done. That’s the only interesting part, maybe folks will post their own tips and tricks. Those nuggets of information on when to call a cook done are pretty useful.+++++++++++++++++++++++++++Austin, Texas. I'm the guy holding a beer.

Hang in there, I didn’t understand this forum when I was a noob either. It took some time but then I realized how it reminds me of the locker room before a big fencing meet. Lots of hijinx and everyone is talking about so many different things and taking swipes at each other but it’s just the anxiety. Everyone really loves each other.
