    Btw, this is one of the only places where you can have a cook going sideways at 2am in the morning and you will get help.
    @DainW and @PigBeanUs  - I agree with Ozzie. Take a look at my first cooking post here to see why.

    I was impressed by the thoughtful comments and suggestions for a newbie's first documented cook. The only thing I can complain about is that the times of the comments are missing after a post is archived, otherwise you could follow the timeline and see what Ozzie meant. I do know I was the only one awake in our house when I cut the meat after letting it rest.

    That experience in 2017 is why I'm still a member of this forum. The people who care will comment and help. It is what this forum was back then and it still can be today.

    Speaking of time, why do ppl use 12am or 12pm, why not 12noon or 12midnight?

    Actually, 12midnight could be confusing/ambiguous too, is it the end or start of day.

    True story, our kid's graduating class booked an after prom midnight boat cruise. Huge disappointment for the kids when the boat was MIA, thanks to the 12 am/pm mix up  :o

    Okay I think I’ve figured out what’s going on here. One of my other interests is fly fishing. My local river has a forum, of which I consider myself one of the regulars, been a member for 5-6 yrs now. All of the discussion revolves around fly fishing in some form or another. Sometimes the forum is absolutely dead. Sometimes there’s a lot going. Anyway, this is the exact opposite of that, except for cooking. Anyway, never a dull moment around here from what I can tell so far, and also some pretty damn good cooks, when they do occasionally post something cooking related.

    I’ll start a “tips and tricks” thread. I’m cooking wings, and we all know the story. Raised direct 375-400 until done, or the ten other variants. But, I’ve got an indicator that tells me the wings are done. That’s the only interesting part, maybe folks will post their own tips and tricks. Those nuggets of information on when to call a cook done are pretty useful.

  • Hang in there, I didn’t understand this forum when I was a noob either.  It took some time but then I realized how it reminds me of the locker room before a big fencing meet.  Lots of hijinx and everyone is talking about so many different things and taking swipes at each other but it’s just the anxiety.  Everyone really loves each other.
