You make it look easy cap.lousubcap said:No great pics but another pedestrian brisket cook -pre-ordained by @blind99 earlier this PM.
And a $$ shot:
It was good but took a few hours longer than my recent ( two year +) experiences. Fortunately no time constraints with this one.
But always remember, the friggin cow drives the cook.
Stay healthy and safe out there-
I still find brisket cook intimidating, outcome and timing are unpredictable

I’ve had that, or something similar. Restaurant in Wilmington NC. Big table side production but not as much shaved cheese.nolaegghead said:

A mayo slathered butt will shortly be landing on the egg, I don't remember the last time I smoked one. Planning on pulled pork blue cheese slaw tacos tonight.

@lousubcap You manage to accomplish what so many of us struggle to do. The cow may drive the cook, but you end up making the cow see things your way. Kudos on a nice cook. I’m sure you and some other lucky souls will enjoy a feast.Coleman, Texas
Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...
"Bourbon slushies. Sure you can cook on the BGE without them, but why would you?"

That's different. You just use mayo as a binder instead of say mustard?alaskanassasin said:A mayo slathered butt will shortly be landing on the egg, I don't remember the last time I smoked one. I came up with the idea last night then googled it, and sure enough there is a Mayo butt thread on this forum dating back to 2005. This is the first time I have used a binder with the exception of @YukonRon outstanding peach butt recipe.South of Columbus, Ohio.

I should have said that I only tasted it. A couple of friends had it (made for two at this place) and we all tried it. It tasted as we all expected it too, good but meh, mostly show. I’m sure what they show in that pic at that restaurant is a different animal altogether.

Our internet has been down since a hail storm came through yesterday afternoon. Not very common here in Orange County, CA. I was still wearing shorts and flip flops though.
Couldn’t work much today other than a couple calls and some emails, super slow week anyways which is why I don’t take it off. So hanging with my son and enjoying a nice sunny day today.
