    We are on a 'refresh' before the party starts.  A few from my phone through the day, so far.

    and the chairman of the board... my grandson;

    Two observations:

    1: it looks like your son may have married the Captain’s daughter.

    2: I think we all may need swords as a wedding accessory.

    Congrats on the nuptials!

    Swords are awesome!  I hope the played Queen's "Princes of the Universe" right before any sword fight ensued.

    We used to buy a version of the dried chili condiment from our local Thai place in Austin, we put it on everything. Trader Joe’s has one that’s good, lighter on the chili’s and lots of dried onion.  It’s not as pungent, good but different. I’ll order some of this one you recommend.

    All the cool kids have already moved on from the Lao Gan Ma and are now into artisanal Thai/Chinese riffs like Boon Sauce.

    And if y'all are digging the chili crisp, you need need to have a go at this...

    Its delicious. Try some drizzled on a homemade waffled with maple syrup.

    Getting a lil smoke on some Chex Mix

    What do you add for smoking wood and are you introducing a lot of smoke or more of a nice back flavor?  I’m a Chex mix junkie this time of year and always tweaking the recipe.
    I go very light with apple wood.  Just a hint of smoke. I’ll generally run 2 batches and mix once they are cooled.  This seems to get the smoke profile where everyone likes it.
    A little bit of smoke goes a long way. I sometimes don’t even add chunks and just use the lump (Rockwood of course).

    Man if the world doesn’t look very different by next summer I don’t know... I might be looking for the nearest bridge to jump off.

    Gotta focus on the positives:

    i) it’s a great time for introverts;
    ii) no need to exercise nor to maintain standards of personal hygiene or grooming;
    iii) no more daily commute to the salt mine (for many, at least); and
    iv) resurgence in home cookery;
    v) quality time with those we live with.

    I’m sure the list goes on.

    Quick story from the road yesterday, kind of goes along with my above post.

    I responded to a welfare check of a 72 year old male that lived alone. One of his friends called us and said that she had not heard from the man in five days, which was odd because they talked every single day since they were 19. He was a drinker and would call her even more when he had been drinking.
    ....
    I say prayers and blessings on the regular, for folks to have friends like that fella had. And for folks like you to take care of bidness.

    Had to have Pops airlifted out of Belize a few months ago, after he had a bad subdural hematoma there. Would have flown a cadaver back, had it not been for a friend of his who promised to check on him the next morning, after finding him acting kinda funny the night before.
    That’s the thing - all it takes to make the world a bit better place is to do some good for your neighbors. Care about them just a bit. If they do the same, and it’s done in every neighborhood we make the country better. One small act of kindness at a time.

    Congrats.  You can burn store-bought marinade.  I'm sure the lighter fluid adds to the cornfield guido terroir.
