Brisket lab

I’ve been in the lab a lot lately trying to get ready for my new pit.  This time, I experimented with using a little mesquite with my post oak.  The mesquite barely came through, so I think I’ll got 60/40 next smoke and see how it comes out.  

Here is the result.  I’m pretty happy with how well the seam rendered.  Prime packer smoked at 250.





Here is a random steak cook from the other day.

    By the way, congrats on the new pit. It looks awesome and can’t wait to see some grub off of it. That’s a monster fire box, suspect a lot of insulation and I bet it’s really efficient.

    Nah, the new pit is from Austin Smoke Works.  When John Lewis and his dad came up with this design, and started mass producing them, Moberg was still making reverse flows.  He was a friend of the family and was hanging around the shop got all the fine details about their inlet, stack and how they did their fire box.  This was proprietary information that really made their design incredibly efficient and produced even heat, even across a 1,000 gallon tank.  A few months after acquiring the information, Sunny made his first replica of John’s design.  He’s a copy cat and a pretty dishonest dude...I would never give him my money.
