Love love this thread as well. The variety in answers just shows the inherent beauty of the egg. My top 3, in no particular order:
1. Surf and turf - prime filets T-Rex style and grilled lobster tails with garlic herb butter.2. Charbroiled oysters - so easy and so unexpectedly delicious
3. Brisket - I love the pomp and circumstance that, for me, starts at Costco and carries through the trimming, the simplicity of salt and pepper, and the overnight “tending” of the fire. There’s nothing like pulling that meteor out of the cooler and slapping away the hands of all your buddies trying to grab the heavily barked ends. That brisket is what the community of BBQ is all about. -

Here's one of my favorite things to cook. Whole ribeye cap. I bought a whole primal cut prime ribeye from Costco awhile back and separated the cap from the eye, trim it up and rolled and tied it and into the freezer. After thawing, I untied it and dry brined for several hours in the frig. (1/2 tsp kosher salt per lb. of meat) I set up the BGE with the AR rig and put the grill gates, smooth side up down low, to sear on later. Rub the cap with Worcestershire and seasoned with Oakridge BBQ's Spogos, a little spay of duck fat and cooked @ 300 for about 30 minutes, flipping several times. I then pulled it about 120, spayed a little duck fat on the grill gates and got the fire roaring. Decided to put a little Oakridge BBQ's Carne Crosta on the meat before searing. This is really a great tasting piece of meat, Our Costco sometimes has the cap tied up as individual pin wheel shaped steaks, about 2" wide. I'll get these sometimes and untie them, roll them out and cook hot and fast.

All of it is great, but there is something about taking a tough and cheap piece of beef and turning it into a delicious dinner, pulled beef done this way:

Brisket is my favorite. Salt and black pepper seasoning cooked indirect at 250 degrees over some oak. When internal temperature reaches 165-170 wrap meat in foil and cook until internal temperature reaches 195-200. Keep brisket wrapped and rest 30 minutes preferably in a cooler.Fort Wayne Indiana

Definitely brisket. Also smoked gyros is one of my all time favorites. I use Alton Brown’s recipe, but smoke the meat concoction instead of the oven method he uses. Works well with lamb and/or venison.
