    I smoked at 225 at the grate for the most part. We spiked to 240 at one point but not for long. Wrapped about 175ish. Since I did 3 in one XL and it's for a wedding, I used my egg genius. Kept temp nailed the entire cook and gave me reads on all 3 briskets while they cooked.
