Started off with some easy peasy appetisers.


I used salt, pepper, rosemary, garlic, and horseradish to rub the rib roast that I picked up at Aldi's on sale last week.

Sides were sour cream and horseradish crispy mashed potatoes and asparagus.
Indirect at 325 for a couple of hours.

I was going to reverse sear on the MM but I liked the way the crust looked at 125 internal. So after resting for several minutes, we sliced it up.

Nobody complained. Thanks for looking.

Yes, rather easy. Cut some small red potatoes in half or quarters (do not peal). Boil until tender. Mashup with horseradish, sour cream, salt, and pepper. Preheat oven to 375. Spoon potatoes into cast iron skillet and bake until the "whisps" of the potatoes are brown. The amount of horseradish and sour cream will be to taste.
