Good friends and good food. A great way to kick off the week.

Started off with some easy peasy appetisers.

I used salt, pepper, rosemary, garlic, and horseradish to rub the rib roast that I picked up at Aldi's on sale last week.

Sides were sour cream and horseradish crispy mashed potatoes and asparagus.

Indirect at 325 for a couple of hours.

I was going to reverse sear on the MM but I liked the way the crust looked at 125 internal.   So after resting for several minutes, we sliced it up.

Nobody complained. Thanks for looking.

Very nice @bucky925. Looks like a good time was had by all and a very nice meal. I would like to have that piece of fat off of that end.

Perfect cook! I agree you had a nice crust no sear needed on that bad boy

I seem to notice that after the kick-off, @bucky925 seems to have gone silent. Perhaps he is up against a formable big time foe.....and is unable to work a camera at this point.  =)

Yes, rather easy.  Cut some small red potatoes in half or quarters (do not peal).  Boil until tender.  Mashup with horseradish, sour cream, salt, and pepper.  Preheat oven to 375.  Spoon potatoes into cast iron skillet and bake until the "whisps" of the potatoes are brown. The amount of horseradish and sour cream will be to taste.  I use quite a bit of both.
