That point is huge. Planning for an early dinner tomorrow. FTC will play into the decision. Will enjoy some adult beverage later this evening.lousubcap said:@SamIAm2- don't know your finish-line window but that hunk of protein looks great. Enjoy the remainder of the cook and follow-on eats.

A slow learner here-I have moved on from SRF steak buys and am now working backwards to chain store flat irons for the win. Since this journey is filled with a few leaps of faith I just tonight fired up a Costco prime ribeye:

The above was the sear part of a 3 lb reverse sear cook.
And here is the money shot:
I did not press the diamond plate into service (although available), something about rotation
. Yes it was quite tasty but I am continuing to dial back my steak buys.
I'm sure it is the cook but I will enjoy true beef goodness thru the briskets, beef ribs, chuckies and flat irons down the road. Thanks for looking.Louisville; Rolling smoke in the neighbourhood. I see an epic smoke ring in your future.SamIAm2 said:Cooking my second prime brisket. This one is 14.5# and I had to drape it over a rib rack to fit in the large. Been on since 4:00 pm this afternoon. Just pulled the rib rack and it fits now. Internal temp is 162 and cruising at grate temp of 265.

Nola is grossly overrated and romanticized. Man do they have awesome cold cut Sammy’s with olive salad! Yum! City is dirty and service is subpar as a whole. There are exceptions obviously.nolaegghead said:

SF is great. Love Boston, but not on par with Chicago food wise. NY is NY of course.

Sitting on the patio listening to Dan Carlin's Hardcore History - Blueprint for Armageddon Part VI.
Amazed and horrified by how awful WWI was. It gets overshadowed by WWII. I never knew much about it till this podcast.I would rather light a candle than curse your darkness.

Just installed underground dog fence around 4 of our acres. Rented this EZ tencher. Worked well until I got into the clay. Then it worked ok. Had to unclog it. Thanks for the tips @tarheelmatt I saved $2200 over using invisible fence brand. Got it done in one day. Now 2 weeks of dog training.Large, Medium, MiniMax, 36" Blackstone
