I'm beginning my Egg experience with Baby Back Ribs. I'm thinking indirect with apple chips for a couple hours and then into a pan to finish. Am I looking at 300 degrees to start with?

Ribs for me are rub em up, throw em on at 275 ish, start looking at about 4.5 hr. But I'm lazy. -

SGH said:You can cook ribs anywhere from 215 degrees all the way up to 400+ degrees. However I recommend until you get use to controlling the egg to shoot for something in the 250-275 degree arena. It's a lot easier to control and maintain at these temps until you get use to it. Again congratulations on everything and enjoy the new egg.

BGE recommend 350 or below. 275 is a good controllable temp for your rib cook and is well below the recommended 350 for the gasket.
