I've been very interested in in The sous vide cooking. I would love to try it. My questions are:
1) what is the best machine to get? Size?
2) I'm short on space. could I put it in a roll out drawer next to the sink and either hook the drain into the sink drain or pump the water out? I don't even know the process. I just know you have to fill it with water and I assume you drain it after very use..

I have the sous vide supreme demi. It's a self contained unit around $350-$400. NOLA has the rig I would get if I were to buy today which is the poly science unit. It's around $800. There are cheaper setups you can use with a crock pot, rice cooker or stock pot starting around $150.Keepin' It Weird in The ATX FBTX

I have the fever too. I asked santa (the wife) for this one here to test the waters a little more. I have done a few steaks in my rice cooker but the temp swings are kinda hard to maintain. There are 2 poly science units and some great videos on their website. Here is the cheaper one. And here is the more expensive one I believe that NOLA has. I lean towards the head style because I am running out of kitchen storage space too many toys. Watch some videos on it they will blow your mind and centex posted a short rib post several months ago that sold me on it. Just get the best you can for your budget and enjoy!

I think this unit is the best bang for the buck. It'll do everything my more expensive unit will do, doesn't take up counter space (just attach to a cooler, pot, or any container) and it's around $500. The resale value on these are high, so you can always flip it and get most of your money back if you just don't get into it.

That circulator is very cool. Not really a storage problem. I might go for it. It is much more compact than the self contained units and would probably do more volume.
Nola......I don't think there will be fire and brimstone....but you'd better wear your PFD to work!

Dang...I like it. It is even smaller. But I don't know if I can wait till March....and.....It is never a good idea to buy the first production unit of anything. But I sure do like it!
