Father’s Day Freezer and Fridge Dive: Beef Tenderloin and Homemade Venison Brats

For Father’s Day my request was that we cook stuff that is already in the house - and not go shopping or to a restaurant. 

We found a beef tenderloin from a friend’s cow in the freezer and some homemade venison brats in the fridge that had been there a while. I figured I’d just cook them up and we would have some cooked protein around for meals for a while. 

We both prefer steaks to roast so I cut up the tenderloin.  It’s a hot day here in Texas so we decided on ice cold rose from one of our favorite Texas wineries.  More to come

    More pics. As the steaks roasted indirect above the cast iron plancha I tried to put the thinner cuts/edges toward the center where it is cooler so everything would cook evenly.  It worked out pretty well

    Great freezer dive and nailed the edge to edge finish.  Happy Father's Day.

    I want to buy a freezer like that.

    Excellent choice on choosing Rose' with the meal. I knew the cook would be infinitely awesome, so no surprise there.

     Q) How was the wine? I checked out the label, and assuming it is from the hill country? What grape  is the source? Q) Will the winery ship to Kentucky?

    My beautiful Wife and I have been drinking a ton of Rose' with our cooks on the egg. it just works out so well with everything. Occasionally we will pull the cork on a big red, but the grenache has worked so well for us, and those we cook for.

    @YukonRon, thanks for the comments. The rose is quite good. We’re not usually fans of rose, but my loving bride really likes this one. 

    It’s a rose of cinsault made by a winemaker trained in France (his name is Ben Calais) who is growing fruit and making French style wines in Texas. His Bordeaux blends are as good as any I’ve had from France. He also makes wine for The French Connection here in the TX Hill Country. I’ve not had their wine yet but @The Cen-Tex Smoker speaks highly of them.  He prefers to be a small production winery to keep quality high and that seems to work well. 

    As for the quality of the freezer dive, as you know I have some friends who have their own cattle who generously give me high quality beef deliveries from time to time. I wasn’t even sure what we had in the freezer but I knew there was some good stuff in there and I wanted to cook some for Father’s Day.

    That’s my favorite rosè right now. Love it. The grub looks fantastic as well. Think I might pop one of those rosè tonight.

    I believe they will ship it to you but they don’t normally ship in the summer months because of the extreme heat down here. 

    This is a must stop if you guys make it back out this way.

The Cinsault was given no quarter. Excellent time, I cannot recommend this destination and the activity enough. One of my favorite wine destinations. Good times, wonderful folks. I will return.

    I have to get an independent shipping company to pick up my purchases from California, to be able to get it home. They use traditional carriers, but in Kentucky, backwards ass commonwealth, vineyards are not allowed to ship direct. If that could be arranged, I will try.
