My mom said prime rib and I'm not one to argue about it.
23. 7 lb choice is a bit much for four.
So let's save a little for later.
I'll roast the first cut or small end, 3 bones about 9lbs.
I cut 4 ribs off, about 3.5 lbs, to smoke later and I'll save four 2 lb 2.5 inch steaks for another day too.
And about a pound of trimmings for sumthin sumthin.
I'll salt it tonight and tie it in the morning. Not sure on the rub. May just go with SPG.
I'll smoke with post oak chips and pecan chips in the smoke daddy magnum P. I. G. for an hour or so then light some oak lump and use the smoke daddy and coal for a bit.
I'll finish it with a reverse sear.

20 degrees at the start here, not too bad considering what others have been dealing with. A small ham for the kiddos and a prime rib for the grown ups are on. Yeah, I forgot to foil the stones. I was rushing setup during unwrapping breaks. Merry Christmas all!

Two small Creekstone prime “rib roasts”. One was 3.4 pounds and one was 3.3 pounds. Creekstone had them on sale at 2 for $110 (38% off).My wife and daughter teamed up to make homemade pasta that they learned to make in a recent trip to Italy. This included tortellini stuffed with ricotta and prosciutto. And we made some green lightning scallops for my daughter the pescatarian - and the rest of us to supplement the beef.
