4:30CST update. Yeah it’s only 4:26 but the oldest has middle school soccer practice in an hour lol.Sausage is a pork andouille. Hen has been deboned. Gumbo will slow roll till about 7 on simmer. I’ll skim the grease, bake off some bread and serve over rice -

My day old bread makes a photo op top right behind the bowl. A warming meal on a cold night. Missing green onions as a finishing garnish -
Ultra-crispy, air fried wings in a homemade rub. Served with a sour cream/greek yoghurt/Mexican sauce (picked up in Mexico) concoction and leftover spinach salad and halloumi.(Am very, very happy with my wing M.O. at present. Generally cook at higher heat - 400ish - to crisp up the outside for 20 mins and then lower to 275 or 300 and let the fat render for about another 20.)

Another gift from SWMBO, and no flambadou on this occasion.
Disclaimer, I am terrible at getting the crackling. SWMBO and my son can, so really went hard for the final 20 minutes and hit 230 C (440 F) indirect.
Internal temp of 68 C (155F) when pulled and up to 73 C (163 F) after the rest.
Crackling looks a bit scorched but it was actually crispy! So I am counting that as a success. With a big assist from BGE indirect which kept things moist.
Other girls may try to take me away

Knockout, knockout of a recipe that features no meat, @zaphod. Some dairy, but I feel like coconut milk would be dynamite instead.I doubled the recipe and followed it to a tee, but fried some red onions before adding the lentils. Also used an obscene amount of garlic.Made basmati with Better Than Bouillon Chicken for seasoning, but added some star of anise and pierced cardamom pods.Not plated yet, but some (bad) pics in progress.
