Tomapork
Butcher around the corner cut it to size. He's from the wider kamado community, but that's OK. Perhaps thats why it was tremendous value at £15 and was 'double chop' width.
As ever, reverse sear and skin flamed for the crackling - following my life goal action plan of one day getting that right.
Yes, it is pink at the rarest part but no, I haven't developed horrific belly-ache or highly fluid motions in either directions as a result. I trust chicken far less than I do pork - not starting a thread, just saying.
Also, posting from my phone as images won’t upload from my laptop. 🤔
Other girls may try to take me away
But you know, it's by your side I will stay -
Made bifanas (feat. homemade rolls) for a family gathering yesterday. Great memory of Lisbon. Some neighbourhood kids were over during prep, so I let them pound out the pork.

@paqman
Always been tempted! Just don’t want to risk drawing the ire of my gal with too much more cooking gear! 🙃

Love this! We recently returned from Portugal and fully enjoyed a Bifana in the Alfama area of Lisbon with the mustard and the hot sauce! It got kinda messy at the end but was well worth it!I tried to recreate the Piri Piri chicken on the BGE when we returned but that recipe will need some work.Fresh fish was mostly our diet in Lagos and Porto and I would like to continue that now that we are back home.St Marys, Ontario, Canada LBGE -
So cool, @keener75. Sounds like we charted similar paths, as we did Lisbon, Porto, Sevilla (Spain), then Lagos - with some stops in small towns along the way. Two weeks. Great trip. In Lisbon, we also stayed in Alfama.These recipes have served us really well since our return.

Spaghetti carbonara with a side salad. Avert your eyes to the bastardizations (and apologies), @Paolo.

I would crush that in a heart beat.GrateEggspectations said:Spaghetti carbonara with a side salad. Avert your eyes to the bastardizations (and apologies), @Paolo.

We are currently planning our 20th anniversary (May ‘27). We met in the military while on deployment (don’t tell ‘Cap). Our first “date” was in Rome and the next was in Toulon, France. We have been deciding between going back to Europe or something more tropical. You guys make Spain/Portugal sound amazing.GrateEggspectations said:So cool, @keener75. Congrats on the upcoming anniversary, @Battleborn. Hard to beat a first date in Rome! Portugal and Spain were pretty great. Have had a lot of contacts go as of late and none have been disappointed so far.We’re thinking we may do a bit of Asia (sans kids) for our next travel.Too much to see; too little time.

My buddy gets back tonight from a trip to Milan and Mykonos. That may sway my decision. I’ve always wanted to go to Greece. I flew through the Azores once and the was beautiful. So many places, I agreeLas Vegas, NV

Not cheffing a thing -but @GrateEggspectations, any carbonara is a complete win. Taking exception with @Battleborn, I would crush the lower half, too much green up top.

@Battleborn - there is a back story to that "date."Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.
