Cold smoking…
… a pound of longhorn cheddar this morning over apple and oak. Two rounds were rolled in chipotle powder first. May need to replace the ice in an hour. It was already 72°F when I started the MM and the sun wasn’t even all the way up.

Maangchi's Soy Butter Garlic Chicken over rice and Tteok-bokki (spicy Korean rice cakes) from the NYT app (minus the cabbage that recipe calls for).Next time I make the rice cakes I'll cut the gochujang by a third - was too spicy for SWMBO.Clearly need to work on my plating skills.MMBGE / Large BGE / XL BGE (Craigslist Find) / SF30x80 cabinet trailer - "Ol' Mortimer" / Outdoor kitchen in progress.

Beautiful. Now I know what those rice cakes are. Had Korean fried chicken from a truck a few weeks back and it was served on a pile of those - I couldn't figure out what they were besides spicy, starchy and addictive. This was at a brewery and it was the perfect beer meal.THANK YOU FOR YOUR ATTENTION TO THIS MATTER

Salmon cakes on salad with an olive, caper, mayo, and hot sauce dressing, with some amazing homemade pickles! @Botch DH tried one from each batch and both are equally crispy in his book.

Beef back ribs (beat their pork cousins every time-!) (around 5.5 hrs at 260-270*F)
Freezer dive and remembering that this cut is readily available around Xmas due to the desire for boneless roasts. (LBGE)

Thanks @johnmitchell, @GrateEggspectations, @lousubcap. The orzo side was new to us, and it's a keeper.Tried something different with the crabcakes- 450F on lowest rack in the big kitchen clock for a few minutes, then top rack under the broiler for a few minutes. No flipping, no fuss. Next time, they'll each get a pat of garlic parm butter before going under the broiler.
