caliprince loved Urfa kabab when we visited Turkey this summer, so this had Urfa pepper, Penzey’s Turkish seasoning, and… turkey!

Filet with an onion and blue cheese sauce, mashed garlicky sweet potatoes and honey sriracha Brussels sprouts and carrots topped with candied almond slices.

Assisted my better half in cranking out (as in cranking the pasta maker) some dumplings...

pan fried after steaming, also made some noodles with leftover dough...

Those look incredible. You are a lucky man to be united with a woman with such talents; and vice versa.What are the dumplings filled with? And what sauce is on those noodles? -

Dumpling fillings
Ground pork or beef (raw)
Green onion (chopped, uncooked)
Cabbage, onion (chopped and fried)
Garlic, ginger (minced and fried)
Soy sauce, S&P (we keep seasoning simple; can also add oyster sauce, five spice powder, sesame oil)
Corn starch
We have an unusual work flow for the skin... instead of rolling out a big sheet and punching out circles, we find it easier to make little dough balls and run them through the pasta maker with progressively thinner passes, gives it the nice chew and no scraps to reprocess. Post steam pan frying tightens and crisps up the skin.
Noodles was quick and simple... stir fry minced garlic and dump/mix in strained boiled noodles. Homemade chili oil on the dumplings.

@caliking It was rather late so four each was enough for us oldies, Lol. Rest is for deliveries, they also freeze well once steamed.
@fishlessman Thanks, I pressed the 14g (for uniformity) dough balls into round wrappers using a pasta maker, my better half filled and hand folded them.canuckland -
