down to one portuguese bakery in the area, about 1.5 hours round trip. i dont get why theres not more. those sweet rolls fresh really kick up a breakfast sandwich. i would think other bakeries around would start making them again. maybe the name portuguese sweet roll doesnt hit home like hawaiian does.

There are tons of maple/dijon sauces out there, but this is the one I used. https://somethingnutritiousblog.com/maple-dijon-salmon/
Once mixed, I didn’t find it sweet enough (and I’m not really one for sweet), so I threw another teaspoon or two or maple syrup into the mix. I recommend using the recipe as a starting point, and simply adjusting to your tastes.Enjoy. -

Mix of things from the last month, waffles with stewed apples and fresh cream, sticky rolls, and ham and scalloped potatoes. Twins have kept us busy and wife has had some post baby health challenges that have led to two hospital stays and finally we hope fully on the mend. Burgers on the egg for dinner tonight.

Pulled pork and grilled corn. Yes, I know there is some blasphemy afoot.

Decided to make pizza tonight. Tried @Canugghead dough (very good). Toppings are tomato base, shredded mozz, then fennel sausage, garlic confit, and carmelized shallots. Cooked on the RB for 2 min. Then topped with a dusting of rosemary and thyme, plus parsley. Drizzled with Mike's hot honey and fresh shredded pecorino and parm. Crust swiped with garlic oil.

A cornucopia of eclectic taste;
- locally smoked beef carpaccio with some cheeky pickles
- local oysters, grilled with shallot, smoked lardon and panko breadcrumb
NB, I did none of the smoking, in fact merely drove to collect the oysters from the coast 10 miles away. I did open the oysters (all fingers and blood volume still intact) & take the pics.

Fyi @GoldenQ APL's foil wrap process starts with 1/2 hr meat side down, 1/2 hr meat side up, rest 20 min in foil, remove and continue with tightening/saucing.canuckland -
