Chicken, hickory smoked at 220°just over an hour then bumped up the temp to 400.
Pulled when temperatures hit mid 160's. Very juicy and my surprise crispy skin.
I tried out this new to me lump charcoal and added some hickory chunks also.
I liked how the lump lit and reached temperatures and held said temp.
Might try this again with some chicken thighs and see if I can achieve that crunch once more.

Marinaded flank steak salad. Pepper and finishing salt. 450 on cast iron grates for ~8 minutes on the egg cooking to medium/medium rare.

Bought a three pack of whole chickens at Costco. Two were prepped for this and vac sealed (one for this weekend and the other for the freezer) - https://www.saltfatacidheat.com/buttermilkmarinated-roast-chicken. Great, stupidly simple recipe.
The other was frozen whole and will be destined for fried chicken or something of the sort. -

Thank you, friend, and thanks to @lousubcap and @johnmitchell as well. The positive encouragement is appreciated. My folks were holding the fort and brought all the makings of taco night - some assembly required. As we’re out for dinner, I get the text from my daughter showing me her work and asking me to post. American Wagyu steak, pan fried, basted in garlic butter and thyme, roasted potatoes and garlic bread. There were also mushrooms and some chimichurri sauce. It was devoured quickly so no sliced shots. It was more medium well as SWMBO and SWMBO Jr require it that way. Thanks for the look

Frittata with rosemary ham, goat cheese, sweet onion, dill and cherry tomatoes, served with S-I-L’s sourdough. Mostly a product of wanting to use some residual ingredients from last night’s dinner.

Biang biang- style rice noodles for lunch. Leftover rice noodles, garlic, ginger, cilantro, scallions, chili crunch, and stuff.
