Marinated the extra strips of pork in Walkerswood spicy jerk with added all spice, low and slow in pellet pooper at @170 (pressed for time and cranked up to 225 near end) till IT 145. Smoky, spicy, juicy and tender like poor man's prime rib!

Pork from last night was good but too much unrendered fat for cardiologist's liking. Experimented with a couple of slices and decided to convert it to jerk bacon
