Great first post/cook right there. Nailed it!Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period. -
@Canugghead I have skewers like that a friend gave me more than a decade ago. They last forever. They do very well at keeping the food from spinning.XL BGE, Large BGE, Small BGE, Weber Summit NGMemphis

By far the best pulled pork I’ve made on a pellet grill. This thing held temps within a degree or two for ten hours. The bark wasn’t there but everything else was spot on.

Messing about with a paella. Related, over the years I have landed in the place where paella is like pizza-use the proper rice (dough) and then have at it, tradition be da-ned. So with that that I gave one a run-veggies, jalapenos and artichoke hearts, along with a bit of chix and some shrimp. Lots of garlic
Sofrito is like pizza sauce, gotta have it.
!0" (aka 25.4 cm) pan on the SBGE.
And the $$ shot-gotta have some socarrat-
Tasted much better than I captured.
Enjoy the Fourth and all it stands for.Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period. -

Can usually get an onion on just one skewer and the width of the blade is enough to keep them from spinning.

The July Fourth pork butt cook that went to the local small staffed fire house:
On the LBGE-
And the money shot-
One of my better offerings given I don't cook that many butts. Nekked for the run. 7.7 lbs raw-took 8.5 hrs at an average of 290*F on the dome.
Bark was nice and tight, as it should be.

@shtgunal3 - thanks for the kind words. My challenge is to become consistent and I am quite confident that is an elusive goal.

Pizza dinner chef’d by a good friend of mine. While he wouldn’t want me bragging about him, I am pretty proud. The former sous chef at one of our city’s highest rated restaurants. Yes, he’s sharing his dough recipe with me later. He’s one of the reasons I am so passionate about cooking.

cooked shrimp, smashburgers, cheese steak at a friend's house, we brought half the food. Watched fireworks, then got a wild hair and decided to wing a multi-layer cake without any experience, sans any recipe except a frosting. The cake mixes were bought.______________________________________________I love lamp..
