    It was a joke to start.  One would think that after years of watching The Price Is Right every day with Drew Carey you'd have obtained some appreciation for humor, but perhaps not.

     Time and temp for SV? I've got a 2.5 lber that I'm planning on doing for Christmas. 
    @caliking - this one ran @ 134° for about 7hrs with just salt in the bag because I had a busy day and threw it in b4 I left the house. Normally I do 134 for about 4hrs and they are really good. I hit it with OBR Santa Maria rub b4 the sear. Mrs3969 said this one was way better and I agreed.

    What's really on my mind is if I could integrate dressing into the masa. Dressing inside of masa seems somehow redundant. My vision is turkey wrapped in a masa/dressing matrix. Then use gravy for the "tamale sauce".
    I almost wonder now about a cranberry relish in with the turkey for a bit of acid pop.

    When I did the egg rolls, I added some cranberry in with the turkey and stuffing.  I used the gravy for dipping.

    It all works pretty well together in an egg roll so I have to imagine it would in a tamale as well.   I like how you're thinking.
