The Year of the Dumpling (TYOTD). The saga begins.

Tonight is the first night we did everything from scratch. Dough, filling, sauces, all of it. Super fun and for our first time, I think it came out pretty well. We made wagyu sirloin yakitori just in case.
It was pretty damn tasty.
A few notes: the filling, chili oil, sauces, and steak were 100% on point. The dumplings were fantastic but we all agreed that the top (where they were pleated) were a bit clumsy and that led to a “doughy” bite on some
of them. For the first attempt, I’m pretty happy with how it all turned out.

Extraordinary! Great post. Have been down the make your own wrapper route, however we have a number of fantastic Asian markets around us and there are lots of different choices. Whether gyoza or dumpling/pot stickers lots of choices on the fillings. We tend to fall back on the classic cabbage and ground pork. Chili sauce has fantastic look and colour.
