Very experienced cook(s) to get those ears perfectly bronzed like the rest of the porker, without burning them off.  Wow!

And I should have mentioned that the two pits with the golf cart tires are self-propelled.  One has it's own drive motor to the wheels and the other has a wench that is used to pull it onto the back deck of the BBQ trailer.

@Eoin, we had to do something to console us after watching Liverpool win the Champions League.

@The Cen-Tex Smoker, I think we need to have some advance planning next year so you and some other South Texas eggheads can attend. @20stone, @caliking, and others.

I'll try to plan better for next year.  I anticipate it will either be Saturday May 30, or Saturday June 6, 2020.  Location TBD (somewhere in/around San Antonio) as the guy who has hosted it for the past 4 years (and is the single largest donor) has two ranch venues like this and has put both of them on the market at some point over the past couple of years as he would like to sell one.  This was the first time at this venue and it was probably better than his other place, but it's my understanding that he has a potential buyer for it.
