My first brisket-better than expected

smoked my first brisket yesterday and it turned out better than expected. Long time reader of the forum, and got lots of input from here.started it at 8:30 pm, digiQ set at 250. Wrapped at 1AM with internal temp of 170. Took off at 7:30 and it was done at 203. threw it in the cooler until it was time to eat at 11. The bark wasn’t what I had hoped but it was damn tender and juicy.

    Definitely a winner.  

    If you wrapped in foil and didn't like the bark, next time try butcher paper.

    I wrapped in butcher paper. I think it needed more time on the smoke. But I wanted sleep instead of checking on it

    Welcome aboard and enjoy the journey.  Above all, have fun.
    Way to jump in and bring it home.  Looks great from here.  If you like to experiment with brisket cooks (and every brisket cook is one) run nekked to the finish to get an idea of how that bark sets up.  Gives you a ballpark idea of the variance thru the cook.  FWIW-
    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

    I rarely love the bark on the briskets I cook - because I usually wrap too early.

    Delicious looking brisket and a huge Vol win! What more could you ask for?
