Had a 15lb Wagyu Gold Brisket from SNF which i pulled from the freezer last night. Planed out a nice menu for friends and family as we partake in float life this weekend. Came home today, went inside to drop my bag, back out in the garage to grab an ice cold adult beverage. My heart sank ....the fridge was open about an inch. everything was hot, EVERYTHING (I live in Florida). Not sure if i didn't close it properly, or the kids/wife opened it- regardless it sucks. I'd been saving that brisket for about 6 month, ya know, for something special (like the birth of a nation). Needless to say I'm pretty heart broken, and only have warm beer to drown my sorrows.

If you are in Florida maybe it was hot enough in your garage that you were actually cooking it very slowly.Which came first the chicken or the egg? I egged the chicken and then I ate his leg.

I'd probe with a thermo. I'm betting it's some or mostly frozen in the middle.------------------------------

BTW- if the door was open that much and the compressor wasn't really working hard then you may have a compound casualty on your hands.Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint. -
I’d temp it, rinse it and give it the ole sniff test. Then I’d cook that bîtch and eat it.

If it was pork or chicken, I'd say throw it. I think twice about tossing it.
How many hours and what's the internal temp?
Competitors frequently pull them out of the fridge and let them sit on the counter all afternoon to help age them. Brisket is usually good to go.

I let beef get to room temp before I cook it, the nose knows. Give it the sniff test.

Rub with salt, pepper and lomotil and you'll be good to go. Just don't get more than 50 feet from a bathroom for a few hours just in case.

Oops, been there done that. I'd still sniff it and give it a go. I survived eating brisket that had sat at room temp for almost 20 hours a couple weeks ago. Not so much as a fart. No I said I wouldn't spend the premium on it unless it was fresh. Freeze/thaw cycles degrade the quality, especially long term freezer storage.DMW said:
