    Wow. Had the ranger cattle wagyu tri tip tonight. Reverse seared over oak chunks a served with a board dressing of EVOO, red wine vinegar, parsley, sage, thyme, and garlic. Better than the best ribeye I’ve ever had. Was like butter but very beefy as well. Can’t get over how good it was. I had 2oz of beef, a huge pile of Sous Vide carrots and a bigger pile of arugula salad with lemon vinaigrette. A fat slice of homemade bread to run through the board sauce. Simple food but very satisfying. Sorry for the sloppy pic. Was an afterthought. 


    That's it. I'm going to start planning on how to move to Texas. Know a good realtor?

    @The Cen-Tex Smoker That tri-tip looks delicious. Your commment about your portions resonates with how my wife and I are eating. Tonight we had prime New York strip reverse seared. We split a 9 oz steak, had roasted potatoes, and a salad. It’s possible to eat well and control calories. I’ve had to adjust my thinking - but I certainly haven’t suffered.

    You need to grab some of this stuff next time you are through. I can grab it and hold it for you. Absolutely incredible.

    Dude, that is commitment. I am feeling piggy w my 7 oz of hangar steak (along w a salad and bowl of beans (w hock and made w pig stock). Sadly, no bread for me.

    There is definitely another shady parking lot meat deal in my near future. I still have some left but this is the best skirt I’ve ever had. The ground was incredible to and at $6 lb he’s 40% cheaper than all the primo/wagyu guys I know of
