Beef short ribs ... aka brisket on a stick

Cooked these up last weekend, smoked over hickory and cherry for 11 hours at 125C/250F until IT 95C/203F. Absolutely lovely, very rich, moist and tender. Served with smokey chipotle beans which were cooked within the same window (pictured below). Served with a Ch. Ste. Michelle Syrah, perfect combo. Full cook details:

We had leftovers so heated them up the next day with some BBQ sauce and baked potatoes with smoked cheese.

Love me some brisket on a stick. The only thing I would change is to remove the drip container and let the ribs drip their beefy goodness into the beans.

@lousubcap sorry bud. I don't think that's the first time I've done that to you.
@CTMike we did consider that, but thought a lot of fat would end up in the beans. And in hindsight it would have done, but there were some flavoursome bits in the fat. So what I'd do next time is put the beans on later, they only took 3 hours, after the meat has deposited most of it's goodness into the tray. I'd take that from the tray, deglaze with some red wine, put that through a fat separator and pour into the beans. I get the flavour without the fat.

@mEGG_My_Day I haven't had the Egg for that long, and I cook pizza at 400C/750F which cleans up the grates nicely.
@Eoin I got the ribs from Turner and George, very impressed with them.
