    I think those are the purdiest short ribs I've seen.  Very nicely done.

    A question for the collective on these ... it occurred to me that virtually all short ribs posts I have seen have the meat contracting at both ends, however mine only seemed to contract at one end and was bunched up rather than lower and flatter.

    I doubt this matters, but any ideas as to why this would have happened?

    I just put 2 racks on about an hour ago...hope mine turn out as nice as those!  Well done.  I'm thinking about cubing the meat off the bones at 185 IT and making some rib bone burnt ends.  Post coming later....
