    Just click on any users name: 
    Example- Click "SGH" and a screen will open with my "avatar". Just above and to the right of my avatar will be "message". Click on message. That will send a private message.

    i would change the recipe for my tastes if i did it again, new englanders use pork salt, not bacon, and i would add some red beans as they dissolve and make the bean sauce better. it also needed more molasses

    The slower heat transfer might be an advantage but one clear advantage over something like a cast iron dutch oven is that the clay cookers are not reactive. I don't care how well seasoned a CI dutch oven may be if you are doing a long slow cook including something like tomatoes you may well pick up some funny tastes from the metal. Clay - no problemo.
    i understand the tomato thing in cast iron, its funny how you see so much online about tomatoes not affecting a well seasoned pot =)  beans are sometimes cooked underground up here, the pot for that is cast iron, makes for a really traditional bean supper. we very seldom put tomatoes in beans but i do have a recipe with two tbls ketchup per pound dry beans. bean pots up here are passed down like cast iron pans are in the south, ive got some from my great grandmother
