Ron, if you do the way I described, it's a private message that only I can see. You are thinking about posting on someone's "wall". Everyone can see those. I'm going to send you a private message to show you what I'm talking about.RRP said:

Eggdicted_Dawgfan said:@fishlessman that looks awesome. Can you share the process/recipe? I assume you cooked the butt and then put it in the DO with the beans and cooked some more?
heres the recipe

heres my original post
http://eggheadforum.com/discussion/1180296/beans-and-pork
i would change the recipe for my tastes if i did it again, new englanders use pork salt, not bacon, and i would add some red beans as they dissolve and make the bean sauce better. it also needed more molasses

i understand the tomato thing in cast iron, its funny how you see so much online about tomatoes not affecting a well seasoned potHeavyG said:
The slower heat transfer might be an advantage but one clear advantage over something like a cast iron dutch oven is that the clay cookers are not reactive. I don't care how well seasoned a CI dutch oven may be if you are doing a long slow cook including something like tomatoes you may well pick up some funny tastes from the metal. Clay - no problemo.fishlessman said:
the glazed bean pots make better beans from scratch than the cast iron ones, slower heat transfer maybe? never any burning and the salt pork seems to render better floating in beans in the old style clay bean pot.SGH said:@RRP
Ron it's kind of ironic that you posted about a clay pot. My wife has been wanting one as of late. The denist that she works for has one and really likes it.
With that said, are they worth it? Offer any kind of advantage to anything?
beans are sometimes cooked underground up here, the pot for that is cast iron, makes for a really traditional bean supper. we very seldom put tomatoes in beans but i do have a recipe with two tbls ketchup per pound dry beans. bean pots up here are passed down like cast iron pans are in the south, ive got some from my great grandmother
