What I did with leftover ribs!

Options
Had about 3/4 rack of ribs left over and I thought today what could I do with the leftovers.  Off goes the light!  Smoked ribs over braised spinach on top of creamy grits!  Ribs-n-Grits!  

Grits cooked with milk and lots of butter.  Super creamy and silky.  

Cooked spinach with canola oil/butter w/garlic slivers and red pepper flake.  Hit at the end with white wine vinegar.  

Pulled ribs off the bone and re-heated in a pan with more sauce and butter.  

Assembled consisted of grits, spinach, and rib meat.  Drizzle of some sauce and green onion as garnish.
