It was a great meal overall. Local place had baby backs on sale for $2.99lb (which isn't that great, but good enough), so I nabbed two racks.
Did a KC Masterpiece rub that I bought while in Ohio and was trying to use it up. It's a decent rub actually. Went 250° for about 3hrs. with apple and hickory. Wrapped with butter and honey. I actually wish I would have skipped this step and just went for the duration.
Simple cornbread went 425° in CI skillet for about 20min.
Made some pintos with some chunks of bacon ends from bacon I made last week and a left over ham bone previously cooked.
Made some mac-n-cheese and cole slaw to round out the meal.
Pretty good vittles for the uneducated white and deplorable family in NC.

I recommend going with baby backs over St. Louis style. Can't miss with these. -
