Clams
First meal in a long time I was totally unhappy with, tried some clams and they just were tough and not enjoyable at all to eat, not sure I'd try them again to be honest. I like clams have had them many times but I didn't like these. I cooked so many as I had planned to vacuum seal the leftovers for future meals like alfredo or marinara etc.

They do look great, but I don't know how well they would take to vac-sealing.

If they were tough, I would suspect that they may have been cooked a little too long.

They were tough, I pulled them as soon as they opened wide, which is what they said to do in all the videos I watched, but it was my first time cooking them so maybe so.
I was going to vacuum seal the meat only not the shell, and use in sauces for pasta later, it may or may not have worked.Tommy

The larger the clam, the tougher it is. The larger ones are usually chopped up and used for chowder or other dishes.
To a certain degree, they get a bit tougher if you cook more, although not as much as mussels or squid.
I'd try them raw, if they're tough, they'll only get worse cooking so you can only really enjoy by chopping and making chowder or something.
I usually test cook one or two before committing to an entire batch. Figure out what they are.

I have egged those very same clams from Cedar Key many times. You may have left them on a little too long.
I always cook them in some sort of liquid, whether white wine and garlic or a tomato based sauce.
