spicy clam cakes

<p />cooked up some chourico and steamers for clam cakes yesterday, wrapped in bacon so they would setup. basically wet some bread with milk, chopped clams, chopped celery, chopped chourico, some old bay seasoning. form into balls and wrap with bacon and push into hockey pucks. refridgerate, then cook til done in a pan inderect at 300 till done. these had ritz cracker crumbs and butter on top before cooking.
