    And a word to the wise - if @caliking and @20stone ask you to be part of the planning and execution of their cook, try to talk them down about 75% from whatever they are planing. 

    They obviously haven't read @Mickey's advice on how to enjoy an eggfest by not being too ambitious with the cook. They both took it to 11.

    Those are the bast I've ever had too. Started with pretty fresh and well treated ingredients. I have 4 packs in the freezer. We will be having those for lunch today.

    We are going at it one step at a time.  Between higher tables and a (slightly) less involved cook this year, I feel like a million bucks.

    I'd only planned on feeling like $500K, so next year we crank it up again!

    This is good advice with @20stone on anything. His 75% will kick your 100%'s ass.

    Banh Mi Sandwich, Bacon Wrapped Bananas. We shared our tent with Photo Egg and his lovely wife. Sandwich was made from sliced, marinated brisket, a steam bun, daikon (slaw), Hoisin sauce and a dash of Sriracha sauce. We used Thai Bananas cut to the width of a slice of bacon. A dash of Sriracha sauce and a topped with a sauce I made from coconut milk, brown sugar and cinnamon. The steam were steamed on the grill using cabbage leaves to keep the buns from getting soaked.
    1 Large BGE, 1 Mini BGE, 1 Minimax BGE, Original wife and 3 dogs living in the heart of BBQ country in Round Rock Texas.

    What a great day. Attendance was lower than years past, but it was wonderful to meet up with some familiar faces in Salado again.

    The food was fan-freakin'-tastic!! I can't remember all of the great bites I had all weekend. For about 24hrs starting Fri night, @20stone plied us with all kinds of goodness - cap of ribeye, lamb with Armenian stick bread made from scratch, homemade brats, etc. I don't know which one was my favorite. @Photo Egg made his signature lamb pops at the after party that were amazing as usual.


    @Foghorn - it was great to hang out with you. If you're wondering where so many of your apple dumplings disappeared, it was probably me. They were delicious. As were the Majorcan Datil pepper wings. as if that wasn't enough, you brought some fine brews. I think I've found a new cooler to raid if @henapple keeps absconding.

    But that @Hotch character is a menace. The dude sets up his tent, starts banging out treats, and then comes over to give me his washed pans because he heard I was having some trouble with one of my cooks (ended up cooking the kebab meatballs for the afterparty). And then he picks up the pans after I was done, and washed them again. What's wrong with that guy?!? (Seriously, I owe you a coupe of real beers the next time I see you Hotch. Thanks again).

    Photo Egg talked me in to cooking at the Athens fest, so planning for the next one is already underway :)

    I loved those bacon banana shots. Sadly, I missed the banh mi. So many people were talking about them.

    @JohnInCarolina, no hating.  Salado doesn't have a petting zoo, unlike your NC Butt Blast in sub-40 days from now.  Doesn't get any fresher than that. 
    Richmond and Mathews County, VA. Large BGE, Weber gas, little Weber charcoal. Vintage ManGrates. Little reddish portable kamado that shall remain nameless here.  Very Extremely Stable Genius.

    We did have several dogs with their humans in attendance in Salado. Several were fed some excellent treats. I think this the Salado version of a petting zoo.

    @ caliking - so glad you listened to Darian. He is one smart fella.  You are going to enjoy the Athens Eggfest. They really go out of their way to make sure us cooks have everything we need. They even provide someone to run to the store if we need something. Your little boy will have a blast at the Texas Fisheries. They will provide him with a fishing pole. Don't let him miss the big fish tank where the scuba diver goes in to feed the fish or take him on the train ride. So glad you are going. You will be glad you did. The Super8 Motel has just renovated and has some great prices. Look forward to seeing you in Athens!

    Oh so true.  When he pooped out Saturday night I had a little - very little - left in the tank (or bottle).  I thought I had kept up with him until I realized that he had gotten up early to sneak over to the fest site and light his egg at 0600 so he could have his legs of lamb done in time for the fest. 

    But make no mistake, he is a heartless bastard.  Once he decided it was time to pack up and save some stuff for the afterparty, he was done.

    About 5 minutes after that happened, a family came by and he had one serving of lamb left sitting out.  Their son asked what it was and seeing that he looked like a kid who might be hard to please I made sure to describe it's deliciousness in detail. The kid did as instructed and took the piece of homemade bread, put the lamb and chutney on top of it and wolfed it down.  His eyes lit up and he said "wow, that is REALLY good".  

    Joy lifted the faces and hearts of the mom and dad and they both said "He doesn't like anything."  The mom asked if she could have a taste - presumably so she could learn the taste she was shooting for - to finally prepare something that her son will love to eat.   20stone let her know that he had no more...  in a brusque "if you truly cared about your son, you would have been here sooner" sort of way.

    After they walked away, caliking asked him "Did people really eat ALL that lamb?".  He replied "No, I've got a bunch left for the after party...."

    I turned to see the family walking away with slumped shoulders....

    I was sad until I realized I had a good cold beer in my hand...

    First, Foghorn can sell the hell out of an eggshell full of lamb.

    Second, there is a homily that deals with snoozing and losing, and folks that walked up after 2 PM bore the brunt of that.

    Last, the lamb ended up being saved for the after-after party, and turned into Rogan Josh last night.  I definitely enjoyed it more than those parents might have.

    I have to thank @fishlessman, for recommending Allagash to me on a trip to Maine two years ago. Now I'm hooked and I live in a place that has no access to it. It's a problem.

    Likewise.  The pork and veggies you served in the daytime and the ribeye and lamb pops you served at night were all incredible.
