Wings were rubbed 48 hours in advance with Gumbo Shop rub and put into a large ziplock and refrigerated. (I'm not sure there was anything magical about this rub - I just wanted to give it a little kick.)

They were cooked direct at about 300 (the egg didn't have a thermometer) so it was a relatively slow cook that took - oh hell, I'm not sure how long. Usually I time my cooks by the number of beers but we were sharing large bottles around. Maybe 30-45 minutes. Until they were fully cooked - but not all the way to really dried and crispy. And I usually prefer indirect for wings, but the eggs at the after party didn't have a platesetter... so now I'm wondering if direct is better.
The key is the sauce. I've played with the ratios and here is what I have come up with:
4 parts Minorcan datil pepper sauce: http://www.minorcandatil.com/Minorcan-Datil-Barbecue-Sauce.html
5 parts Teriyaki sauce (I use Kikkoman)
6 parts Buffalo wing sauce (Sweet Baby Ray's is my new favorite, but I've had good results with others).
Mix the sauce in a large bowl. Take the wings off when they are essentially done and put them in the bowl and get them covered in sauce.
Put them back on the grill for 1-3 minutes to set the sauce/glaze. If you do it for any longer they start turning black because of the sugar in the sauce.
Serve and eat.
If you add corn starch to the rub - or use it as the entirety of the rub - they will be crispier and soak up sauce a little better. However, what is described above is what got my loving bride to declare them the best wings I have ever cooked (she doesn't like the corn starch) so that's what I'm going with.

Sharing a cooking tent with him worked out well for me and @20stone. When he served his fancy Indian tarts on his fancy 4 level display and serving tray on the tables that 20stone elevated with leg extensions, there were only a couple of us who could reach the top level of tarts. Yes to helping you drink your beer. For 5 years I brought two full coolers to the fest. Now I have to say they were so much better than @henapples beer but not in the same ballpark with yours. I could have taken 3 minutes and ran to the house for beer but hell, yours was better than anything at the house.Foghorn said:
