OT Low carb pics and Recipes

As suggested by @johnmitchell and @blasting here is a place for some low carb pics and recipes if anyone is interested in sharing what you are making.
Low carb meatloaf:
2 lbs ground chuck
1 lb ground sausage
1 egg
1 cup crushed pork rinds instead of bread crumbs
1/2 cup diced bell pepper
1/2 cup diced onion
1/2 cup reduced sugar ketchup
1 teaspoon minced garlic
mix all ingredients by hand but don't overwork it or the meatloaf gets dense
form into a loaf and grill indirect over a drip pan until internal temp of 130
glaze with another 1/2 cup reduced sugar ketchup and finish to an internal temp of 160
Here is my result:

The pork rinds are an awesome trick that I never thought of. I try to stay as low carb except for giving up beer. Thank you for the idea.

Thanks for posting this. I am 2 weeks in on low carb diet and have already lost almost 20 lbs. Hopefully this thread will stay alive.Midland, TX XLBGE

Not the most mouth watering post but might be helpful for weekday lunches. What I normally do on a Sunday is egg a bunch of protein, divide it up and freeze for the week. This is from last week: Ribs, Belly pork thick cut rashers and Kielbasa wrapped in bacon... Just defrost and make up a small salad to go with..Greensboro North Carolina

Leftover meatloaf, fried egg, some broccoli and grape tomatoes drizzled with ranch dressing. Only about six or so carbs in last night's dinner.

Used exercise equipment is shockingly cheap on CL.

Tonights supper..
Sautéed some cabbage,red pepper, onion, garlic in a little olive oil and butter. Over med/ high heat, then added pinch of S&P. After about 4 min added the Tiger shrimps and cooked until opaque. Served with capers and a drizzle of Picante sauce and Sriracha hot chili sauce.
Aprox 20 grams carbs..
Very Tasty...

We do a lot of "21 day fix" recipes in our house. Tonight we did turkey chili.
1 lb of ground tyrkey
green bell pepper
red bell pepper
medium onion
15 ounce can of kidney beans drained
15 ounce can of diced tomatoes with juice
1 glass of red wine
Tablespoon of chili powder
1/2 teaspoon of salt
clove or two of garlic.
I usually brown the meat first then seperated. Cut up the onions and peppers and cook till the onions are translucent. Add everything else and simmer for 30 minutes.
A serving is a cup and a half. -

Stellar exercise room. I am now using my weights for a tarp cover I have covering my firewood.
I have a bow flex, it too has not been active for a while. I used it often for about ten years, the results were amazing. I also have a tread mill I would do 5k 3-4x per week. @epcotisbest, tonight will be sauteed chicken, brown rice, and spinach/kale saute. I'll post a pic if you like, but it is boring, lol. Just kidding. As we get older, we have different nutritional needs. Just a fact of life. Diabetes ain't funny and we should be eating differently to prevent it. Another health issue I would like to toss out is the need for iron in our diets. My brother has been having some serious health issues and was referred to an oncologist for blood work. They said no cancer, but put him on two iron drips for three hours at a time. I had never heard of such a thing as an iron drip. He's 69, but much better now. Who hasn't been told by their doctor that iron is not needed for men at all, or women after menopause? I know everyone's body is different, but we have moved all of our cast iron into the kitchen and will be using that from here on out for a lot of things. Sorry, just ranting. Stupid doctors. Aren't they supposed to do a full blood panel and check for such things? Rant over, carry on.

Made some roasted veggies last night. I did not have any of the potatoes, but my wife said they were as good as the cauliflower and broccoli.
Simple recipe:
Line pan with foil
chop veggies
drizzle with olive oil
sprinkle with black pepper, crushed red pepper flakes, garlic salt, onion powder, paprika
toss to coat well
indirect at 400 about 30 minutes
I place the roasting pan directly on the platesetter raised on four foil balls to raise it up off the platesetter for an air gap. Let the smoke clear.
These are very good and you can use just about any veggie. I just used what I had last night. Served it with a slice of ham.

Just posted this one on another thread, but it'll be good placed here too. Steven Raichlen's Mesquite-Grilled Tuna with Flame Charred Tomato Salsa. From his book Bold and Healthy Flavors. Ran across my old pics earlier. I don't think I ever posted them on this forum. Less than 10 grams of carbs and packed full of protein. Just like the name of the book, it's healthy and packed full of bold flavors.
