    Yes, the @Dyal_SC cook is a winner. Way above my skill set. I am more a spam and eggs, or cruciferous veggie guy.

    @johnmitchell and @epcotisbest ...  Thx for the kind words!  It's actually not a difficult recipe at all.  Doesn't take too many ingredients.  If the recipe isn't viewable in that link then lemme know.  Bold and Healthy Flavors is a pretty decent recipe book.

    Tonight's supper... Jalapeño cheddar jack cheese burger, sautéed onions, freshly sliced tomato served on a large mushroom cap. small side salad.. Total carbs less than 5 grams.. Tasty..
    Very nice. That looks great. Very low carb, but I'm sure flavorful and filling!

    @johnmitchell never used a mushroom cap for a bun before. I'm a big fan of using bib lettuce as a bun.

    Not my lowest carb effort, and due to snow I made this inside. Oven roasted chicken quarters, carrots, and a cucumber and onion marinated salad. Very tasty and still healthier and much lower calorie than I used to eat, so that is still a plus.

    Chicken thighs stuffed with japs,red pepper and turkey pepperoni wrapped in bacon. Prolly bout 6 carbs each. Sweet Chili Sauce was about 3 of the carbs

    Looks wonderful. Excellent pics. Hard to believe you can have food like that while trying to eat lighter and healthier. Low carb is only boring if you let it.

    That looks really good. Low carb, low calorie and very delicious I'm sure. Almost seems wrong to eat so good and yet it is good for you. The tomatoes and avacado side is a good choice. I like that combination. The mushroom cheese sauce topping for the steak is a great idea. I'm gonna have to try that.

    Went ahead and loaded up the medium with good ole chicken thighs dusted with a Cajun rub for this week's protein. Being it is just the two of us, we can make this last for several days and we both thoroughly enjoy leftovers.
    We will have broccoli with it fresh tonight. Tomorrow probably chopped up in a salad and maybe some sandwiches for my wife and cabbage wraps for me later in the week.
    I don't normally crowd the grill like this, but had two packs of thighs the sell by date was today on. Planned to cook them Saturday, but life got in the way, so I just put both packs on this evening instead of freezing one. Turned out quite tasty. Not fancy by any means, but good.

    After a hard days work, sorting out @tarheelmatt waste water problems in Thomasville NC.. I stopped at Fresh market and picked up a great Hereford Rib eye.. Simple cook on the Egg..The Hand brake was out with her Hens  at book club..  Carb friendly dinner.. Minus the Adult beverages..

    @johnmitchell - wine is a much better choice than beer.  That is an amazing looking steak. 

    Can you tell me more about the mushroom cheese sauce a couple of posts up?  That looks amazing. 


    Which came first the chicken or the egg?  I egged the chicken and then I ate his leg.

What I do is sauté some sliced onions in a mix of butter and olive oil over a med/high heat when they are translucent I add the mushrooms, the key here is not to overcook the shrooms, then add some thick cream, and a good quality cheddar cheese( or what ever you prefer).. reduce a bit..then spoon over the rested steak..

    @epcotisbest, great looking thighs. I wish I could get this household to embrace that. I love thighs, not so much everyone else. @johnmitchell , great looking steak. I love the pic, vitamins on one side, wine on the other. Looks like our house, lol.

    Thanks. Easy for me to embrace chicken thighs when the local grocery has them for .39 cents per pound on sale. And they often have them for .49 or .59 cents too, and we pick up a pack or two whenever we are there.

    Us low carb folks gotta snack too. I find snacking difficult as all the stuff I want is loaded with carbs...Little Debbie, cupcakes, chips, even beef jerky. Today I just wanted something to hold me over. Used what I had and it was quite good and only about 3 carbs. Took some deli sliced ham, provolone and peppers and just rolled them up into a handy snack. It squelched the craving and held me over for a little while without my gobbling down lots of carbs I don't want or need.

    Looks very good. I am not a wine drinker, so one less thing to worry about containing carbs. Carb friendly dinner there indeed.

    The very definition of "low carb" is annoying to me.  We (on the forum) cook 99% low carb.  The sides add all that carb stuff, or bread for sammiches.  That said, some excellent looking cooks above this post.  I'm not angry at all.  Carry on.
