    After a hard days work, sorting out @tarheelmatt waste water problems in Thomasville NC.. I stopped at Fresh market and picked up a great Hereford Rib eye.. Simple cook on the Egg..The Hand brake was out with her Hens  at book club..  Carb friendly dinner.. Minus the Adult beverages..

    @epcotisbest turkey and cheese roll ups are one of my go to snacks as well.  When I am busy sometimes it is lunch.  I ate some with slaw inside the other day and it was surprisingly good.  

    One other good low carb snack to get a "chips" fix is pork rinds.  I try to eat them sparingly because of the fat content, salt, etc.  Basically I think of it as a way to eat junk food with zero or almost zero carbs. 


    Which came first the chicken or the egg?  I egged the chicken and then I ate his leg.

    Made a 24 hour marinade for these chicken breasteses and grilled them up last night.  A large hefty dose of lemon and herb peri peri sauce, fresh cilantro, fresh ginger, lime juice, plain Greek yogurt and S&P.  Best marinade I've had in a long while.  Flavorful as all get out.

    Thanks. Yeah, I have some pork rinds but do find myself eating way too many. I recently found some salt and vinegar flavored rinds. Pretty tasty.

    Looks great. Seems like that would be a very flavorful marinade.

    If you have a food processor, the hardest part about that shrimp and oyster meal is pealing shrimp and shucking oysters. Well worth the effort.

    @theyolksonyou - that is a big hell yes. Great looking meal. I have done the green lightning shrimp and it is phenomenal. I really want to try some ersters.

    @epcotisbest - no shame in spam and veggies. If you want to talk lazy I stopped by a Mexican place and got fajitas and cheese dip. My kids ate the tortillas with cheese dip. I had a big pile of meat and veg with cheese dip poured on top.

    That is funny. A couple of weeks ago we went to a small Mexican place where I ordered a plate of taco meat...and topped it with cheese. My wife had a nice plate of high carb stuff while I held strong and did not even have a single chip. Did have some salsa on top of my pile of meat and cheese.

    Thank you. Yeah, those chips, salsa and sour cream looked really good, but I passed. If I had tried just one, I would have probably eaten the whole bowl full.

    This tread dropped five pages deep, so I thought I would post tonight's cook. Just some thighs. Actually enough thighs for several days. .49 cents per pound. Hard to complain about that.
    Cooked indirect at 375 to internal of 175 then let rest tented with foil for about 10 minutes. Lightly dusted with a cheap creole rub bought at Big Lots. It was a tad salty, but added a nice flavor to the thighs.

    Plated with some collard greens and mixed veggies. Highest carb count was the mixed veggies at, according to the label, 9 carbs.

    @epcotisbest, nice looking meatloaf.  I made one Friday, but SWMBO doesn't like me to put veggies of any kind in it.  I am making 2 next time, one for her and the kid and one for me.

    @blasting, nice setup, but don't do what I did and stop using it.  I have pretty nice setup in my basement that haven't used in years, I need to start at it again.  Keep working out, it's hard to start back up when you stop.

    I have cooked LC on my large/minimax 5 days a week to stay on to help control my diabetes and blood glucose for many years. Grilling often was the primary reason I bought a BGE. Good thing that meat and most low carb veggies taste great off of the grill. Staying away from processed foods (almost anything thing in a box, bag or a pouch) and you will lower your carb intake dramatically. 
    1 Large BGE, 1 Mini BGE, 1 Minimax BGE, Original wife and 3 dogs living in the heart of BBQ country in Round Rock Texas.

    Thanks. Meatloaf is becoming one of my favorites on the grill. That and chicken thighs. I gotta have onions and peppers in the meatloaf.

    Preparing things in advance for later in the week is good planning. Makes it easier to avoid the temptation of just stopping by and grabbing a biscuit for breakfast.

    @blasting I just did a workout room and flooring was the toughest part as they are so expensive.  Then I found a little secret.  Get 4'x6' Horse mats from your local farming supply store.  I got mine at TSC for $35/each.  Was a quarter of what I was going to spend and they are thicker.  Love them, no oder, cannot dent and weights bounce off.
