So for my latest meatloaf I made this weekend I have been having leftovers and tonight's leftover meatloaf was topped with a slice of cheese, then with a concoction of sauteed in olive oil diced tomatoes, freshly sliced mushrooms and minced garlic. Served it with a nice little salad and it elevated the leftover meatloaf into something a bit more interesting than just a meatloaf sandwich, which I really wanted, but passed on because of the carbs in the bread. Anyway, it was good and a good way to enjoy the leftovers.
