  • I have made them into meatballs the last couple of times.  They are a hit at parties when I bring them as an app.

They're Scotty's Schwetty Balls.  At least in meatball form.

Someone just suggested to me that it would be more accurate to call these "Scotty's Southern Cracker Sausage Balls, In the Style of Dixie"

I bet this concoction would make for some pretty good meatballs.
Like Double Egger posted up above when he bumped this thread?  =)
Sure.   Those do look like meatballs.  You’re very observant!
Meatballs straight on the egg was not as good as the making it in a pan. As mentioned above, the fat/grease is the critical component.
  • I have been trying to perfect them in the meatball form.  I put them in the aluminum pans and they tend to stick.  I have tried spraying pam before the cook.  Thinking about butcher paper or parchment paper next time.

I need to make an appetizer for a get together this Friday and saw this thread pop back up yesterday. Figured it might be a good candidate for Friday and thought I would make it for tonight and see how it is in a stuffed mushroom. I think the stuffed mushroom is a good way to go. Even meatballs would work.

Made a couple of slight changes based on what I already had in the fridge. I used a blended 3 cheese instead of mild cheddar. I also chopped up the portabella stems and added them to the meatloaf mix. The portabella mushrooms were overstuffed and used about half the mix. I made a double batch and had a half batch left over that went into the freezer.

Be sure to rotate the pans top to bottom or the mushrooms will be done way early. There was some grease but not as much as I thought there would be.

It was good. Thanks SGH for sharing.

  • Think I am going to have to try them this way.  I have made them into balls before, but cooked them in an aluminum pan.  They always stick.  Maybe directly on the grill with a drip pan is the way to go.  Let me know if you have any issues with them sticking to the grate.

Didn’t really have any issues with sticking to the grates.

Definitely doing this next time then.  How long and what temp did you cook them?
