Putting on my 4 month wet-aged brisket(not on purpose). Egg settled in at 246 with hickory and pecan for smoke. I'm out of oak. Went with Don Marcos Mafia Coffee Run so I could get rid of it. I have zero expectations for this so anything will be a pleasant surprise.

@ozzie_issac it's where you buy a brisket with a pack date of 10/10/15 and leave it in the fridge because you can't decide what to do with it for 4 months.

My big guy came down with a head cold last night. He has baseball tryouts for a travel team tonight. Chicken noodle soup in progress.
Have some chicken breasts in the sous vide to chunk up and add in later along with the noodles.They/Them

@DMW - If he can hit it then he is home free. That hand-eye coordination is the largest challenge with baseball. You can develop the other traits but that's the key, unless he is a left-handed pitcher-now that's a pass to greater things. Good luck with the try-outs. Just finished up some baby backs ... apple for smoke, Dizzy Pig Pineapple Head for rub, and some Red Mud for glazing on two-thirds of the rack. Pineapple Head doesn't produce your normal BBQ taste, but a very good change-up on ribs ... it'll show up again soon.

Of course, the bars outside Wrigley are worthy - but only after day games, IMO. After weekend night games, well . . . there're houligans about - sometimes.
If you're with the fellas, no prob. Enjoy the show.
If you're with your wife, just go home/to hotel or risk bruising your knuckles.
It's been awhile, but I know.
OTOH, after games at Cellular, just leave. Day or night.
But first . . . stop at Maxwell Street Polish (31st street, I believe) for a polish or pork chop sandwich. Horrible, unhealthy, excellent food for a baseball day!
