Grilled up some pork tenderloins last night-
Made a new dish I hadn’t tried before, skillet fried celeriac root (celery root). We stay fairly low on the carb side and this scratched an itch for something with a little crunch. Shred the root ball, mixed with a little Parmesan, S/P, garlic and bacon. Fry like a hash brown. These made the redo list- forgot to snap a pic so I “borrowed” this one from the website I found the recipe.

A little over but it was still decent. I had a couple of these and a couple thick fillets I tied up. These got about 5 degrees or so over whilst wrastling with the fillets. One of the fillets had to be medium. Oh the trials and tribulations!

Put a 4.5 pound pork loin in the fridge to marinate with Walkerswood jerk paste and olive oil. Considering adding orange juice an hour or so before putting it on the Egg. I also have a small pie type pumpkin/winter squash baking in order to make cookies tomorrow using the inside oven.

First time in a while that we've had just a good old burger and/or dog off the egg instead of smashed on the BS. Were just as good as I remember.
