I spent a beautiful afternoon on the deck trying to replicate two sauces me and @bubbajack had at a Mexican food truck and at a cantina in the back of a grocery store.

The first was a green sauce with lots of flavor but not especially spicy. I loosely followed the "green lighting shrimp marinade" except I added smoked green tomatoes and white vinegar.
The second was a very spicy red/orange colored very smokey sauce. I took out some of this years tabasco peppers from the freezer and threw them on the grill with heavy smoking wood.
Neither one disappointed, but I think I got closer to the original with the green sauce.
The best things in life are not things.

Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint. -

@SciAggie absolutely beautiful. Nailed it as expected. Sticks are a whole different environment and operating experience but at the end of the day it's the cook not the cooker.
