@YukonRon, thanks from me too, although I think I had over an hour to spare?  My several-year-old Thermapen is still working fine (used it today), but if I have a spare in the drawer, it'll never break!

I won't ask about the diversion (It had to be serious for that)  but I would never have seen that coming.  Perhaps the interior was salvageable??

After reading @GATraveller post on empanadas, I thought I would tackle them with my left over brisket.
 Pretty good, food network recipe using brisket instead of burger.
 The first two I tossed in the oil ballooned and spit my fillings into the hot grease....
 Well I scratched that itch.

Enjoyed this late lunch.  Too lazy to reverse sear and caveman so just flipped several times.  Got a bit more internal sun-tan than planned but dang, great flavour.  SRF coulotte 2 lb cut from their sale this summer. 

I will definitely order again if the sale presents itself.
