    First one ive ever wrapped.  Used butcher paper after the stall.  Bark looks a little weak.  We shall see in a few hours. 
    Follow.  It was destroyed in minutes.  Had a hard time cutting for all the fingers in the way.

    Only way to go, IMO. I let it ride a 250 until it hits 120 internal. Pull it, open up the egg and sear it for a couple minutes each side. 

    SV works well too. Never done one hot and fast, but maybe I need to try.

    I SV tri tip. That’s about as a low and slow as you can get. It’s excellent with a caveman sear.

    First trial of the Smobot went well; kept my pit temp at 240 +/- 2℉ while I mowed the lawn.  Babybacks (Dizzy Dust, maple smoke, Stubb's Original) were excellent.
     

     
    Dark clouds approached as I removed the ribs to cool, sauce, and remove the platesetter/open the Egg for final sear, first raindrops as I was closing Her up, and the lawn is mowed!
