@JohnInCarolina   Looks good, but where's the money shot?

Ha!  Didn’t get one (I know).  It was actually a little over, but didn’t last much more than five minutes anyway.  We were feeding guests and, well...
Sunshine is the best disinfectant. That said, I understand the push to get the protein sliced and served.  Happens quite frequently and if the consumers enjoyed then another success.  That steak looked most eggcellent going in.
I am actually thinking thru how I'm gonna 'splain the pause between the brisket slice and dice and plate with the required low quality pics on Monday.  I have hosed this sequence before so this is not uncharted territory.  Have a great evening.

Ever had a day where you cooked too much, and weren't hungry for the main meal you spent all day on?  Yep, that's me today - still full from lunch and not hungry in the least.

Rechecking his liver values tomorrow .Feel pretty lucky he's been so chill about being here. He's come to work with me every day for the past 3 years so he knows everyone taking care of him and trusts them pretty well so he's been a good patient...Its his first time on that side of the kennel vs under my desk

So glad things are headed in the right direction. Had more expierence with garbage gut than I care to recall!

@blasting I will readily admit that I enjoy the whole prep and cook process much more than the consumption piece unless a true hot&fast.  For the big proteins, I am good with the consumer's satisfaction of the end product.
For me the journey is the best part by a few orders of magnitude.  FWIW-

Certainly a different experience.  My boys would go to the vet, not knowing anyone, set on a cold metal table, then stuck with needles.  Several times.  Then get their balls chopped off.
Then, finally, go in with their brother but not coming out with him.
Crap, my own post went dark quickly, sorry about that.  Hope your dog gets better very soon!

@bgebrent - you likely will kill the champagne before running out of bacon.  And all so well laid out.  Most impressive.

Pulled the entire silverskin off my babybacks this morning in one whole piece, never happened for me before.  This means either:
    1) it's gonna be a fantastic day, or
    2) I'll get hit by lightning while mowing the lawn later this morning.

Take a minute today to remember what it’s all about.
The National Moment of Remembrance, established by Congress, asks Americans, wherever they are at 3 p.m., local time, on Memorial Day, to pause in an act of national unity for a duration of one minute.
