    I thought I would try something that I haven't done in quite some time. Thought while I had the big unit at 375 this would be a good time to whip up my version of stuffed chicken. Deboned then stuffed and tied with gulf shrimp. I may demonstrate these at the brisket camp as well if anyone is interested in learning to make them. They are pretty good for a quick snack.imageimage

    @SGH‌ maybe I missed it, but is that a custom vertical, or home built? Is love to have a big offset or vertical. (Learned on an offset)

    I'm going to let you in on a little secret my friend. I didn't really cook a brisket. That's a clod with the Infrapatius removed and then flattened out. This whole post has been a hoax ;)

    I took on a 52oz medium rare bone-in Ribeye once and let me tell ya.. 3x 22oz Bud Lights kept me from finishing the last 2 ozs..

    Seriously though, that is a lot of meat.. and I likes meat!!! Looks awesome.

    At the 3 hour mark I fired the smoker with only cherry wood for the remainder of the cook. I wanted to test a hypothesis. Also I held 400 degrees hence forth.imageimageimage

    That was 34 ounces in under 6 minutes. That was only the "warm up" to tide me over for the shrimp stuffed chickens. And then the brisket. And then the other steak. Be patient. I will post those pics as well. Maybe even a short video of me devouring one of the stuffed chickens.
